barbecue chicken meatballs
BBQ chicken meatballs were the biggest hit of the party

Barbecue Chicken meatballs are a fun recipe for your next party but be warned, you’re going to have to make a TON of these. They’ll disappear quicker than your paycheck at a casino.  I made these for a client’s party last night and guests were coming into the kitchen to get them by the bowl full, I barely had time to get them on the wonton chips and out to the living room. Guests loving your food and wanting to eat it all is the BEST of all problems for a chef to have.

You MUST try this barbecue chicken meatball recipe.

Ground chicken has a softer texture than ground beef so these meatballs don’t hold their shape as well and tend to be flat on the bottom. That works out great for this recipe so the meatballs won’t roll off the wonton chip when you pick it up.  I don’t add breadcrumbs to firm up the mixture because that changes the texture of the meatballs in a way I find unpleasant.

These look so good. I usually prepare them for my children but these are a seriously adult version. 🙂 I can’t wait to try them.

I love to serve appetizers on wonton chips, they’re so light and crunchy. The only problem is keeping yourself from snacking on them before you serve.

Admittedly, I’m not usually a meatball fan, but these look delicious and totally different from any meatball I’ve ever had!

These meatballs are a bit lighter and more tender than a beef meatball, guaranteed to win you over 😉
