Chef Chris Koetke shows his Chicagoan pride as the James Beard Awards roll into his fair city on May 4th. Chef Koetke (Vice President of Kendall College School of Culinary Arts) chats with me about his culinary trends forecast. He sees some wonderful things in our future and one of those things is MORE RAMEN! You already know what a HUGE fan of Ramen I am from this post I wrote last year about my Southern Style Ramen with Bacon, Collard Greens and Homemade Broth recipe.
Chef Koetke also predicts that punch will be big culinary trend, that’s something else I can get behind. I certainly hope that prediction comes true because who doesn’t like a big bowl of spiked punch at a party? Punch makes the art of the cocktail so much more simple and lets the party hosts get out from behind the bar and enjoy their guests. After talking with him I started working on a few punch recipes, I’ll share those with you very soon.
