Wicked Dolphin Florida Spiced Rum is a beautiful clear amber color, when you pull the cork stopper from the bottle you get the spicy aroma, with nutmeg taking the lead. I took a little sip (just a little) of rum and tasted nutmeg, caramel and orange. The flavors and aroma led me to come up with this Carrot Cake Cocktail.

My Carrot Cake Cocktail recipe is inspired by my Mom. Years ago my mom introduced me to carrot punch, a drink recipe she learned from a Jamaican co-worker. Mom made fresh carrot juice with her juice extractor and mixed it with a touch of sweetened condensed milk and seasoned it with nutmeg. I hadn’t had it for years until one day while my family was visiting my parents we pulled out the old juice extractor and pulverized some carrots into juice. that’s when my kids tried it for the first time. Carrot juice was a hard sell for them but once they gave in and tried it they loved it. We adults added a little rum.

When I got a whiff of Wicked Dolphin Florida Spiced Rum the memory of carrot punch came to mind. The spices in this rum are perfect for this cocktail. Use fresh carrot juice if you can, I don’t have a juicer so I settled for bottled carrot juice which works just fine. To create the carrot cake cocktail I started with the frosting. I drizzled some dulce de leche into the glass ( I warmed the thick dulce de leche in the microwave for 10 seconds so I could drizzle it into the glass. Then I chilled the glass in the refrigerator while I was making the cocktail) I shook the Wicked Dolphin Spiced Rum, carrot juice and bitters over ice and poured it into the dulce de leche drizzled glass. Grate a little fresh nutmeg over the top and serve.

Ingredients
  • 2 ounces Wicked Rum Florida Spiced Rum
  • 4 ounces carrot juice
  • 1 teaspoon dulce de leche
  • dash of bitters
  • dash fresh grated nutmeg
  • slice of orange
Instructions
  1. Drizzle dulce de leche into your glass. You may need to warm the dulce de leche in the microwave for 10-15 seconds to make it flow. Chill the glass before you make the drink
  2. Shake the Wicked Dolphin Florida Spiced Rum, carrot juice and bitters over ice
  3. Pour your delicious cocktail into the chilled glass, garnish with the slice of orange and serve
