THICK THIGHS SAVE LIVES! CHICKEN THIGHS, THAT IS! FIRECRACKER CHICKEN CRISPY CHICKEN THIGHS  IN A SYRUP OF SORGHUM AND HOT SAUCE FOR A SWEET, HOT, STICKY GLAZE

I served Firecracker Chicken crispy chicken thighs with my Pumpkin Ale Waffle recipe for a fun, new twist on chicken and waffles. I was inspired to make chicken thighs this way by recipe for Japanese style fried chicken karaage. the meat is marinated in hot sauce and dredged in potato starch before frying. You can use corn starch in place of the potato starch if you like.

I hope you like it hot because the chicken gets a spicy kick from the hot sauce marinade as well as  the drizzle of sorghum/hot sauce syrup. I love to cook and bake with sorghum, it lends a rich, deep sweetness to recipes. I love using it to add a sweet touch to savory dishes and l also use it in desserts like this Upside Down Apple Cake with Sorghum Glaze

These crispy chicken thighs are great as a party appetizer with or without the waffles. Serve a plate of them with a cocktail fork. Your guests will be VERY happy!

Firecracker Chicken Crispy Chicken Thighs with Sorghum Hot Sauce Syrup

Serves: 4-6 servings
 
Ingredients
  • 3 pounds boneless, skinless chicken thighs
  • ¾ cups hot sauce, divided
  • salt and pepper
  • 2 cups potato starch or corn starch
  • ½ cup sorghum
  • canola oil for frying
Instructions
  1. Cut each chicken thigh into 3 pieces
  2. Place the chicken thighs into a zip top bag or bowl and add ½ cup of hot sauce, ½ teaspoon salt and ¼ teaspoon pepper
  3. Marinate the chicken thighs at room temperature for 30 minutes
  4. Drain the marinade and toss the chicken thighs in the potato or corn starch ( do this is batches only coat the batch you are about to cook
  5. Heat a ½ inch of canola oil over medium heat and fry the chicken in batches
  6. Drain the chicken on a paper towel or a rack
  7. TO MAKE THE SORGHUM / HOT SAUCE SYRUP
  8. Stir the sorghum and remaining hot sauce together until well combined
  9. Drizzle the syrup over the chicken and serve

    This looks amazing! I usually go to a local restaurant in my city to eat chicken and waffles but I’ll definitely have to try this recipe!

    This looks really yummy. I never heard of that sauce before. Can you find it at local grocery stores or is the only place is amazon?

      Hi Michelle. Muddy Pond Sorghum is the most widely available in supermarkets, look for it in the syrup section. If you don’t see it there you can ask them to get it or order from Amazon. Thanks so much for reading

      HI Brad. I used Texas Pete hot sauce. I find that its hot but not ridiculously hot and I like its thickness as well
