I’ve been looking forward to the holiday season all year and now FINALLY it’s here. I love to open my home for a day long holiday open house so friends and family can drop in, have a few snacks and Share some holiday joy. ‘Tiz the season for baking and decorating and I’m going to use Coke de Mexico made with real sugar for both.

My Coca-Cola and Cream Whoopie Pies were baked with Coke de Mexico in the batter for the cakey cookies and Coke blended with cream cheese in the filling as well. Coke de Mexico, made with real sugar, is a family favorite – I picked up a 24 pack while I was in Sam’s Club so I had plenty for my recipe with some left to serve my guests. After baking I had a lot of empty Coke glass bottles so I did a little craft project.. That iconic Coke bottle shape is perfect for my tablescape, let me show you how I dressed them for our holiday table.

  • Soak or peel any stickers off the empty Coke de Mexico glass bottles, dry them and give them a couple of coats of flat white spray paintCoke de Mexico bottle crafts sweetsavant.com
  • Wrap the bottles with twine, ribbon or yarn depending on the look you’re going for. White school glue worked well but hot glue may be needed for heavier supplies.Coke de Mexico bottle crafts sweetsavant.com

  • Make the cream cheese filling first. Simmer two bottles of Coke de Mexico to reduce the soda down to a half cup of syrup and beat the syrup into softened cream cheese and butter. Coca-Cola and Cream Whoopie Pies

Ingredients
  • FOR THE CREAM CHEESE FILLING
  • Two 355 ml bottles of Coke de Mexico
  • 8 ounces softened cream cheese
  • 4 ounces of softened unsalted butter
  • 1 cup powdered sugar
  • FOR THE COOKIE DOUGH
  • 4 ounces (1/2 cup) softened unsalted butter
  • ½ cup brown sugar
  • ½ cup coke
  • 1 egg
  • 1 and ½ cups all purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
Instructions
  1. FOR THE CREAM CHEESE FILLING
  2. Pour two 355 ml bottles into a saucepan and simmer over low heat until reduced to ½ cup
  3. Let the syrup cool to room temperature
  4. Beat the softened cream cheese, softened butter, Coke syrup and powdered sugar until well combined.
  5. Refrigerate until ready to use
  6. FOR THE COOKIE DOUGH
  7. Beat the softened butter and brown sugar until well combined, about 2 minutes.
  8. Beat in the egg and add the Coke
  9. In a separate bowl combine the flour, salt and baking powder and mix well
  10. Add the flour mixture to the Coke/Butter mixture and stir to combine
  11. Scoop the cookie batter with a small ice cream scoop onto a parchment lined sheet pan. About 1 tablespoon
  12. Bake the cookies for 8-10 minutes
  13. Let the cookies cool and sandwich a teaspoon of filling between two cookies
