Good ideas here! Our family already thinks that the Morningstar Spicy Black Bean burger is the best veggie burger in the frozen food section, but we haven’t tried the crumbles yet. I think I’ll get some today! BTW, when baking large whole sweet potatoes, it’s always a good idea to pierce them with a few small holes from a knife or fork. Occasionally they blow apart if you don’t.

Stuffed sweet potatoes! Brilliant. How do you roast your sweet potatoes? In the oven?

Yes, I roast the sweet potatoes on a pan in the oven. It usually takes about 45 minutes at 350 degrees depending on the size of the sweet potato

You could make this with a white potaro or Yukon Gold potato as well. That would be delicious

This looks great. I would have to skip the beans though. Beans and I don’t mesh well.

That looks good! I have an issue with loving avocado, so I wonder if I could even make it to the finished product before eating it all.

LOL! Yes, eating all the avocado before you finish making the recipe is something I can totally understand. Avocado disappears fast in my house too
