This is meal planning at its simplest. Roast 2 chickens make 5 meal and eat well with ease.
Whenever I have time I like to roast 2 chickens in the oven so that we can have cooked protein to eat during the week. Here is my simple and delicious Roast Chicken Recipe

Keep tortillas and tostadas on hand for the kids (or anyone) to make an afternoon snack with roasted chicken, shredded cheese, onions and avocado. Add an egg to this for a great breakfast.
Toss some shredded chicken in a skillet with bacon and some of those carrots and potatoes you roasted earlier for a great breakfast chicken hash.
Salads great way to use roasted chicken for lunch or dinner. Here are two examples of some salads I like to make. Both are loaded with fresh, crunchy raw vegetables bit they’re very different from each other.
