They used to call me “Queen of the Scones”, true story. Years ago, when I worked at the Ritz-Carlton, Buckhead hotel’s pastry shop, one of my jobs was to make scones for afternoon tea. He would hate the scones I make at home. Uniform is the one thing these scones are not. These scones are lumpy and a bit lopsided but oh so tender. No rolling and folding here, just gently mixing and patting together and cutting into triangles with a knife. Because I barely press the dough together the scones can tend to “slide” a bit while baking. If that bothers you feel free to work the dough a bit more, but not too much. Overworking the dough makes for a tough scone.

NOTE: Technically self-rising flour is more than one ingredient because it contains salt and leaveners. However, I’m counting self-rising flour as one ingredient because you purchase and measure one item.

Ingredients
  • 2 and ½ cups self rising flour
  • ½ cup granulated white sugar plus 2 tablespoons for topping
  • 1 cup mixed, dried berries,
  • 1 and ½ cups heavy cream plus 2 tablespoons for topping
Instructions
  1. pre heat oven to 400 degrees
  2. Sift flour and sugar together
  3. toss in dried berries
  4. stir in cream
  5. Form the dough into a ball
  6. Divide the dough into 2 disks each about 5 inches in diameter
  7. cut each dough disk into 6 triangles
  8. Place the scones on a parchment lined sheet pan
  9. Brush each scone with heavy cream and sprinkle each with sugar
  10. Bake the scones for 12 -15 minutes rotating the pan halfway through baking
