How to make sweet potato noodles collard greens and chicken sausage
How to make sweet potato noodles with collard greens and chicken sausage. Beautiful, bright orange sweet potato noodles, collard greens and chicken sausage combine to make a delicious meal packed with healthy fiber and great flavor.
This was my first time spiralizing anything so this whole experiment was new territory for me. I think the key is to get a good quality, sturdy spiralizer that can stand up to a hard vegetable like a sweet potato. You have to use a bit of pressure as you turn the crank on the spiralizer to push the sweet potato through.

I started by browning pieces of Georgia made Delia’s Southerland Farms Jumbo Chicken Sausage links ( this is NOT a sponsored post, I just like the product and enjoy supporting local businesses). If you can’t find Delia’s sausage check with the meat department of your grocery store for a suitable substitute. I added some leftover collard greens (here’s a recipe for my Church Basement Collard Greens) from dinner the night before along with some roasted red peppers, garlic and a bit of red pepper flakes. The collard greens were already well seasoned. Adjust the seasoning with salt and pepper if necessary at the end of the dish. Spinach or kale would be great in this dish as well. I’ll definitely try that soon.
If you are using fresh collard greens instead of pre-cooked wash, slice 12 ounces of collard greens (or use pre washed and sliced collard greens). Add them to the pan with the sausages and 1/4 cup of chicken broth, salt and pepper. Cook for 10 minutes and then continue with the dish.
In a separate pan I sauteed the spiralized sweet potatoes in hot canola oil for about 6 or 7 minutes over medium/high heat tossing gently so they wouldn’t break. I combined the sweet potatoes with the sausages and greens and WOW, it was delicious.

Ingredients
- 1 pound of sweet potatoes
- 2 cups cooked collard greens
- one 12 ounce package of chicken sausage
- 1/2 cup roasted red peppers
- 2 garlic cloves
- 1/4 teaspoon red pepper flakes optional
- 1/4 cup canola oil
- salt and pepper
Instructions
- Cut the chicken sausage into 1/2 inch chunks
- Brown the sausage in 2 tablespoons of canola oil
- slice the garlic and add it to the chicken sausage. cook for 30 seconds
- Add the cooked collard greens like I did strain any excess liquid from the greens and add them to the pan ( the greens don't have to be completely fry but you don't want them to be dripping wet) and add the greens to the sausage
- Add the red pepper flakes if you're using them
- Slice the roasted red peppers and add them to the pan. Cook for 5 minutes
- In a separate pan saute the sweet potatoes in 2 tablespoons of canola oil for 6-7 minutes tossing gently until they are tender.
- Top the sweet potato noodles with the chicken sausage and greens
- Adjust the seasonig with salt and pepper if needed
- serve
