Are you ready for part three of my Vidalia Onion coverage? Who knew onions were so interesting . So you’ve already read my posts on the tour of M & T Farms in Vidalia and the Student “Chopped” Style Competition held by the Vidalia Onion Committee, now onto the GOLDEN ONION COMPETITION!
Six chefs and their crews competed for the Golden Onion and they made some REALLY creative dishes. I’m going to let the pictures to most of the talking so here we go:
Chef James Liles of Publik Draft House-Atlanta GA Vidalia Onion Pimento Grilled Cheese with Vidalia Onion Agrodolce AND served with Vidalia Onion Milkshake I would have LOVED to see the fotage from that Go Pro!
Chef Joe Randall- Chef Joe Randall’s Cooking School, Savannah, GA Baked Bacon Wrapped Vidalia Onion Stuffed with Creamed Spinach and Tasso Ham I wish I could have tasted this dish, I sounds AMAZING, but alas I was off judging the students and didn’t get a sample.
Chef Jeffrey Gardner- Common Quarter, Marietta GA, Crispy Chicken Livers with Vidalia Onion Soubise , Pickled Vidalia Onions, Vidalia Onion-hot Pepper Jelly and Smoked Vidalia-Peanut Salad This was the dish I most wanted to try. Chicken livers are one of my favorite things to eat
Chef Brian Justice – Tasteful Temptations St Simons Island, GA Vidalia Onon Poppers stuffed with Wild Georgia Shrimp, Sauteed Vidalia Onions and Jalapeno Peppers and Monterey Jack Cheese This was such a beautiful plate
Chef Sean Fritchle from Montaluce Winery in Dahlonega GA- Vidalia Onion Ice Cream served with Chocolate Almond Butter Mousse Onion Oil and Onion Ash Winner of best tats in my book, definitely a very creative use of Vidalia onions
And the winner is… CHEF TOM HALL from Baraonda Ristorante Italiano – Vidalia Onion Lamb Sausage Served with Vidalia Onion latkes, Vidalia Onion Green Goddess Greens, Baked Quail Egg and Vidalia Onion Apple Salsa
