Well, that was fast! Summer break is OVER ( for most of the students in the Southern U.S.) and it’s time to get in that back to school state of mind. Nachos are my daughter’s favorite lunch so I keep baked tortilla chips, cheese and chunky salsa in the kitchen at all times. When I make grilled chicken breasts for dinner I usually cook a couple extra for a quick meal the next day. All my daughter has to do is slice up some chicken breast (she’s old enough now to do this herself) add them to her bento lunch box with some fresh fruit and her Grilled Chicken Nachos are ready to go.

I love to keep cooked chicken on hand to make easy lunches like this. Use them with pasta in chicken salad or wrap grilled chicken and cheese in a tortilla for a variation of this lunch. Grilled chicken is perfect for a chopped salad with Romaine lettuce and tomato. The possibilities are almost ENDLESS!
Be sure to use two cold packs and an insulated lunch bag to keep their food at a safe temperature. Keeping foods cold is an important part of food safety. Cold packed lunches should remain below 40 degrees Fahrenheit to slow the growth of bacteria. We don’t want any calls from the school nurse! Pack disposable wipes as well for washing hands before eating lunch.
