I received a copy of this book for free to review. I liked it so much I asked if I could post a video and blog about one of the recipes. The recipes in the book are inspired by the show and written with Nicole A. Taylor (The Up South Cookbook).
The recipes in this book are the real deal. In this oxtail recipe, you create a ‘browning’ burnt sugar sauce for authentic Caribbean flavors. Seeing this in the cookbook got me so excited about the book and the show.

I hadn’t watched the show until I received The Last O.G. Cookbook and now I’m a huge fan of both. Tracy Morgan does a brilliant job of making the audience care about “Tray” a former convict with extraordinary cooking skills.

Ninja Foodi Oxtails Inspired by the Last O.G. Cookbook
Start with oxtails, really cow tails but oxtails sound better. Season them well and slow cook or pressure cook with sweet Vidalia onions, scallions, ginger, and garlic. Jerk seasoning, browning sauce (caramelized sugar and water) and Worcestershire sauce add depth of flavor to the dish.
In the original recipe, the oxtails are cooked for 4-6 hours in a slow cooker. The only change I made was that I cooked it all in my Ninja Foodi (combination pressure cooker, air fryer, slow cooker). After I seasoned the oxtail with salt and pepper I created a browning sauce by caramelizing light brown sugar in the Ninja Foodi on Sear/Saute mode. After about 5 minutes carefully pour in water the brown the oxtails in the caramelized sugar/water mixture. Add the Vidalia onions (if they aren’t in season you can use another type of sweet onion), scallions, ginger, garlic, jerk sauce, Worcestershire sauce, and tomato paste.
Pressure cook this all on high for one hour and 5 minutes. This works the same in an Instant Pot as well. Use natural release or quick release, either works fine.
Add in butter beans and cornstarch/water slurry and simmer on the Sear/Saute setting of your Ninja Foodi or Instant Pot to thicken the sauce.
Serve over grits or rice
