Cheesy Beef and Rice Casserole

Equipment

Ingredients
  

  • 1/2 cup onions chopped
  • 1/2 cup red bell pepper chopped
  • 1/4 cup scallions chopped
  • 2 cloves garlic chopped
  • 1 and 1/2 cup frozen chopped spinach
  • 3 cups rice
  • 3 and 1/3 cups chicken broth you can substitute beef broth or water
  • 1 and 1/2 pounds lean ground beef
  • 1 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese OPTIONAL
  • 2 tablespoons canola or vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon paprika

Instructions
 

  • Set the Ninja Foodi to SAUTE and add oil
  • add the chopped onion, pepper and green onion to the Foodi and saute for 5 minutes
  • add ground beef, salt, pepper, garlic powder ane paprika then brown for 5 minutes then add garlic. Cook for 30 seconds more
  • Stir in the rice then add chicken broth and frozen spinach
  • Cover the Ninja Foodi with the pressure cook lid then cook on HIGH pressure for 3 minutes
  • Natural release for 10 minutes then manually release the rest of the pressure
  • Reserve 1/2 a cup of cheese for the top. Stir in the rest of the cheddar and mozzarella cheese.
  • Top with reserved cheddar cheese then close the AIR CRISP LID. BROIL for about 5 minutes or until the cheese is melted and browned.
