How to make beef and rice casserole in your Ninja Foodi

- 1/2 cup onions chopped
- 1/2 cup red bell pepper chopped
- 1/4 cup scallions chopped
- 2 cloves garlic chopped
- 1 and 1/2 cup frozen chopped spinach
- 3 cups rice
- 3 and 1/3 cups chicken broth you can substitute beef broth or water
- 1 and 1/2 pounds lean ground beef
- 1 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese OPTIONAL
- 2 tablespoons canola or vegetable oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon paprika
Set the Ninja Foodi to SAUTE and add oil
add the chopped onion, pepper and green onion to the Foodi and saute for 5 minutes
add ground beef, salt, pepper, garlic powder ane paprika then brown for 5 minutes then add garlic. Cook for 30 seconds more
Stir in the rice then add chicken broth and frozen spinach
Cover the Ninja Foodi with the pressure cook lid then cook on HIGH pressure for 3 minutes
Natural release for 10 minutes then manually release the rest of the pressure
Reserve 1/2 a cup of cheese for the top. Stir in the rest of the cheddar and mozzarella cheese.
Top with reserved cheddar cheese then close the AIR CRISP LID. BROIL for about 5 minutes or until the cheese is melted and browned.
