Ingredients
One 12 ounce dinner sausage
half a head of red/purple cabbage
2
medium sweet potatoes
2
large Vidalia
or regular onions
3
tablespoons
grapeseed or canola oil
1
teaspoon
kosher salt
1/2
teaspoon
fresh ground pepper
1/2
teaspoon
garlic powder
1/4
teaspoon
fennel seed
optional
1/4
teaspoon
red pepper flakes
optional
1
teaspoon
sherry vinegar or red wine vinegar
optional
Instructions
Heat the oven to 450 degrees
Slice the cabbage into 4 or 5 wedges
Cut the sweet potato into 1-inch chunks
Cut each onion into 6 wedges
Add all the vegetables to the pan, toss them in oil and season with the spices
Add the sausage to the pan
Place the pan into the oven and roast everything for 15 minutes, flip all the ingredients over and roast for another 15 minutes
Drizzle with a teaspoon or so of sherry vinegar or red wine vinegar if you like
Cook until all the vegetables are tender and the sausage is cooked through
