canola or vegetable oil

of cooked corned beef

cup
fresh or frozen cauliflower florets

scallion

cup
chicken broth

large egg
Instructions
Dice the corned beef into 1/2 inch chunks
Chop the scallion
Saute the corned beef, cauliflower, and scallions in oil over medium heat for 2-3 minutes
Pour in the chicken broth and cover. Let this cook for 5 minutes
Add the egg and cook covered for 1-2 minutes depending how you like your egg
