Chop the onion, celery and bell pepper
Saute the vegetables in the oil until they soften, about 5-6 minutes
Add chopped cabbage, kale and broth. If the cabbage and kale don't all fit put in half with the broth, let it simmer, covered until it wilts, about 5 minutes, then stir in the rest
Let the soup simmer for 30 minutes
This makes about 3 quarts of soup. Store the soup in the refrigerator and reheat the amount you need until needed.
Reheat the amount of soup you need and add the mix ins to taste.
