Coffee Rubbed Lamb Ribs

You will need a roasting pan with 2 inch sides to catch any drips. You will also need an additional roasting pan with a rack

- 4 racks of lamb ribs
- 2 tablespoons of kosher salt
- 1 teaspoon dried garlic or garlic powder
- 1/2 teaspoon crushed allspice
- 1/2 teaspoon cayenne pepper more or less to taste
- 1 teaspoon cinnamon
- 1 teaspoon smoked paprika
- 1 teaspoon instant espresso
- 1/2 teaspoon cracked black pepper
- 1/2 cup Honey or barbecue sauce to serve along side
Heat your oven to 325°
Prepare the lamb ribs by removing the membrane and trimming excess fat
Combine the spices and instant espresso well.
Rub lamb ribs with the spice mixture
Completely wrap the lamb in foil and place in a high sided roasting pan
Bake the ribs for one and a half hours or until tender.
Thake the ribs out of the oven and increase the oven temperature to 400 degrees
Remove the ribs from the foil and place on a pan with a rack
Place the ribs back into the oven for 10 minutes to get crisp on the outside
Slice and serve the ribs as is or add BBQ sauce if you like
