slice the garlic and add it to the chicken sausage. cook for 30 seconds
Add the cooked collard greens like I did strain any excess liquid from the greens and add them to the pan ( the greens don't have to be completely fry but you don't want them to be dripping wet) and add the greens to the sausage
Add the red pepper flakes if you're using them
Slice the roasted red peppers and add them to the pan. Cook for 5 minutes
In a separate pan saute the sweet potatoes in 2 tablespoons of canola oil for 6-7 minutes tossing gently until they are tender.
Top the sweet potato noodles with the chicken sausage and greens
Adjust the seasonig with salt and pepper if needed
