Sweet Vidalia Onions-Kimchi Style #VisforVIDALIA

  • 2 large Vidalia onions- about 3 cups when sliced
  • 1 tablespoon kosher salt
  • 1-2 tablespoons Korean Red Pepper Powder depending on how spicy you like it
  • 1 tablespoon fish sauce
  • 1 teaspoon grated fresh garlic- about 2 or 3 cloves of garlic


  • Cut the onions in half and then into thin slices
  • Toss the onions with the rest of the ingredients
  • Serve immediately or
  • Place into a plastic or glass container, cover with a lid and let it sit at room temperature for 1 day
  • the mixture will begin to give off some liquid, push the sliced onions down so they will be covered by the liquid
  • Refrigerate
