Crab Salad with Spicy Avocado Dressing

This is a great salad for lunch or dinner that comes in at less than 400 calories if you don't use all of the dressing.

  • 1 avocado
  • 1 teaspoon apple cider vinegar more if you like an acidic dressing
  • 1/4 water or more to get a pour-able dressing
  • 1/2 teaspoon of salt
  • 1/8 teaspoon fresh ground pepper
  • 1/8 teaspoon cayenne pepper more or less to taste
  • 2 cups romaine lettuce
  • 2 scallions chopped
  • 1/2 Asian Pear chopped
  • 4 ounces lump crab


  • Make the dressing. Peel and seed the avocado
  • Puree half the avocado with apple cider vinegar, water, salt, pepper and cayenne (makes about 1/3 cup of dressing, just use a tablespoon or so)
  • Make your salad with the rest of the ingredients. Add a couple slices from the other half of the avocado
  • DONE
