I had a heck of a weekend let me tell you! After developing delicious 15 minute recipes, gathering all my supplies and putting together a team of helpers, the time and finally come for me to present my recipes at 2017 Pinner’s Conference Georgia.

Thanks to my wonderful sponsors, Sanderson Farms and Vidalia Brands / Bland Farms I cooked two 15 minute recipes for a crowd of nearly 250 guests. I’ve cooked for large parties before but standing front and center with a microphone looped over your ear while you cook and entertain an audience is quite another thing. Once I looked out into the audience and saw it was full of friendly faces that came to see and hear me I calmed my nerves and got to it. I had a great time and they did too. I got lots of positive e feedback.

Let me backtrack a bit and tell you how this whole thing got started. A few months ago I received an email from the creators of Pinner’s Conference, a conference with stops and simple City that brings Pinterest to life exclamation point I thought this was a fantastic idea for conference it took some time for me to figure out how I would fit in. I remembered a poll I took of my Facebook fans, I asked them what was their biggest barrier to getting dinner on the table most nights of the week. The most common answer was “TIME”. Prep time, shopping time, cooking time. There never seems to be enough time. That was the inspiration for my class “15 Minutes ‘Till Dinner”. I would create two recipes and teach my audience how to get a tasty, nutritious dinner on the table in just 15 minutes.

Well, that topic must have resonated with a lot of people because folks were lined up to take the class. It was exciting to say the least and I was so nervous. This was the largest crowd I’d ever presented to but when you’re using products that you love and talking about a topic you’re passionate about, the words coming easily.

My class was at 9:30 in the morning so wanted to start with a dish that could be served for breakfast, brunch, lunch, or dinner. We had Sanderson Farms chicken thighs smothered in gravy made with Bland Farms Vidalia Onions. GET THE RECIPE HERE

The biggest time saving rip for this is to use a large pan with a lid. I frequently use a pan that’s 15 inches wide so I can saute everything in one layer. Covering a simmering dish traps the heat in for fast results.

The great thing about this dish is that it’s so versatile. A helpful hand too fast meal prep is to use proteins that require minimal handling,  like chicken tenderloins.  They cook quickly and you don’t have to spend any time cutting them up.  If you’re not in the mood for tacos this easily become a stir fry adding the pineapple chunks along with some broccoli florets and soaked rice noodles.
