Creole Shrimp and Orzo Pasta

I’ve been working on my 15 Minute Meals cookbook for a while now (it’ll be out before the end of the year so stay tuned for that) so I’m always developing and testing recipes. It takes a lot of trial and error to create a delicious recipe that can be done in just 15 minutes. Sometimes I make something delicious but it just doesn’t meet the time restrictions, this is one of those times.

This Creole Shrimp and Orzo Pasta recipe is full of my favorite flavors. Shrimp and sausage in a sauce of simmered bell peppers, onions and tomatoes is about all I need to be happy. Add a little red pepper flakes for spice and you’re good to go. I stir some orzo into this but it is traditionally served over rice.

Creole Shrimp and Orzo Pasta

Servings 6 servings

Ingredients
  

  • 1 pound large shrimp peeled and deviened
  • 1/2 teaspoon kosher salt
  • 1/4-1/2 teaspoon cayenne pepper
  • 2 tablespoons canola or grapeseed oil
  • 12 ounces andouille or linguica sausage
  • 1 medium onion
  • 1 green bell pepper
  • 2 cloves of garlic
  • 2 cups orzo pasta
  • 1 cup chicken broth
  • One 14 ounce can tomato sauce
  • One 14 ounce can diced tomatoes
  • red pepper flakes to taste

Instructions
 

  • Cook the orzo pasta according to package directions
  • Season the shrimp with salt and cayenne pepper
  • Saute the shrimp in the oil over medium heat for 2 minutes per side and remove from the pan
  • Slice the sausage and brown it on both sides
  • Dice the onion. pepper and garlic and add them to the pan with the sausage
  • Pour in the chicken broth, tomato sauce and diced tomatoes then simmer for 10 minutes
  • Stir in the shrimp and orzo, add red pepper flakes to taste
  • Serve
