They used to call me “Queen of the Scones”, true story. Years ago, when I worked at the Ritz-Carlton, Buckhead hotel’s pastry shop, one of my jobs was to make scones for afternoon tea. Every day I’d make HUNDREDS of scones whipping up the dough in a huge stand mixer, then using a dough sheeting machine, rolling and folding the dough several times to create layers. I’d cut the dough into rounds by hand with a 2-inch diameter biscuit cutter and bake them to a beautiful light brown. The head chef would rave about my beautifully made, extremely uniform scones and compare other cook’s work to mine.
How to make scones
Sift the self-rising flour and sugar together. Stir in dried berries and cream
He would hate the scones I make at home. Uniform is the one thing these scones are not. These scones are lumpy and a bit lopsided but oh so tender. No rolling and folding here, just gently mixing and patting together and cutting into triangles with a knife. Because I barely press the dough together the scones can tend to “slide” a bit while baking. If that bothers you feel free to work the dough a bit more, but not too much. Overworking the dough makes for a tough scone.
Form the dough into 2 disks then cut each disk into 6 pieces. Brush the scones with cream and sprinkle with sugar. You can freeze the scones at this point if you want to make these in advance. Bake them straight from frozen until they are golden brown
I’ll be serving these scones at my Royal Wedding Viewing Party Afternoon Tea to celebrate the wedding of Meghan Markle to Prince Harry. I’ve never been much of a royal watcher but since the bride is an African American woman I excited about the wedding. I wish the best for the happy couple and can’t wait to see Meghan’s wedding gown.
Bake the scones at 400 degrees for 12-15 minutes
NOTE: Technically self-rising flour is more than one ingredient because it contains salt and leaveners. However, I’m counting self-rising flour as one ingredient because you purchase and measure one item.

Ingredients
- 2 and 1/2 cups self-rising flour
- 1/2 cup granulated white sugar plus 2 tablespoons for topping you can reduce the sugar to 1/3 of a cup if you like your scones less sweet
- 1 cup mixed dried berries,
- 1 and 1/2 cups heavy cream plus 2 tablespoons for topping
Instructions
- pre heat oven to 400 degrees
- Sift flour and sugar together
- toss in dried berries
- stir in cream
- Form the dough into a ball
- Divide the dough into 2 disks each about 5 inches in diameter
- cut each dough disk into 6 triangles
- Place the scones on a parchment lined sheet pan
- Brush each scone with heavy cream and sprinkle each with sugar
- Bake the scones for 12 -15 minutes rotating the pan halfway through baking
