Pumpkin Spice Latte Mug Cake

This pumpkin spice latte mug cake is a quick and easy treat that you can put together in about 5 minutes. It’s great for those emergency sweet tooth cravings and its full of all the best flavors of fall!

Pumpkin pie spice is a blend of ground spices including cinnamon, nutmeg, cloves, ginger, and allspice. The spices vary by manufacturers but this is the basic blend. You can make your own pumpkin spice blend or just buy a premade spice blend from your local grocery store.

In the video, I make the cake directly in the mug but it works so much better when you whisk the ingredients together in a separate bowl, then pout it into the mug. You get a much smoother and well-blended batter when you combine the ingredients in a separate bowl.

  • 1 tablespoon of melted butter
  • 5 tablespoons of all-purpose flour
  • a pinch of salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon pumpkin spice
  • 2 tablespoons of white granulated sugar
  • 3 tablespoons of milk whole milk or 2% both work fine
  • 2 tablespoons of room temperature coffee
  • 1.4 cup of sweetened whipped cream


  • Beat all the ingredients together with a whisk then pour into a mug
  • microwave the mixture on high for 90 seconds (all microwaves are different so adjust the cooking time according to your microwave oven)
  • Let the cake cool and top with sweetened whipped cream and a sprinkle of pumpkin spice blend to garnish. If you top the cake with whipped cream while it's still warm the cream will begin to melt. It will still be absolutely delicious with the melty cream running down.
