Strawberry Mango Margarita Popsicles
Oh my GOODNESS! My Strawberry Mango Margarita Popsicles are featured in the June 2017 issue of Essence Magazine! I’ve been a huge fan of Essence for YEARS and to get an email asking if I wanted to have one of my recipes featured…well, OF COURSE I DO!
The Essence editor was looking for frozen treats to include in a summer issue so I decided to turn one of my favorite cocktails into an adult popsicle. Fresh, ripe mango is the star of this recipe.

The biggest problem with making these strawberry mango margarita popsicles is that when you’re prepping the mango for the blender it’s hard not to eat it all. I used three mangos to get 3 and 1/2 cups of chopped mango but since fresh produce varies I’d pick up an extra one just to be on the safe side. If you don’t need it for the popsicle you have an extra one for a healthy snack.
Add a little honey for just a touch of extra sweetness but honey also to help create a smoother consistency. A little sea salt accentuates the flavors perfectly. Freshly squeezed lime juice is a MUST, please don’t use the bottled concentrate stuff. The tartness of fresh lime juice is unmatched.
I used Altos Plata Tequila (referred to as a silver tequila) but I think any of your favorite tequilas would be happy in this recipe

Strawberry Mango Margarita Popsicles as seen in Essence Magazine
Ingredients
- 3 ½ cups fresh mango chopped
- 3 tablespoons honey
- ¼ teaspoon coarse sea salt or Kosher salt
- 3 tablespoons water optional, add if the mixture is too thick
- 2 tablespoons fresh lime juice
- ½ cup chopped strawberries
- 1/3 cup silver tequila
Instructions
- Puree mango, honey, salt, water, tequila, and lime juice in a bender
- Stir in chopped strawberries
- Pour into popsicle molds and freeze until solid
- Be sure to measure the tequila carefully. Too much tequila will prevent the popsicles from freezing
