Sheet Pan Ribs with Sweet Potatoes and Brussels Sprouts - Pork the Taste of Now

Ingredients
  

  • one rack of ribs
  • 2 sweet potatoes
  • 1 acorn squash
  • 1/2 pound of Brussels sprouts
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2-1 teaspoon cayenne pepper
  • 1/4 cup maple syrup

Instructions
 

  • Heat the oven to 400 degrees
  • Place the ribs, bony side down, on the sheet pan. Scatter the Brussels sprouts on the pan
  • Cut the sweet potatoes into chunks and add it to the pan
  • Cut the acorn squash in half through the stem, remove the seeds, and cut into pieces.
  • Place the acorn squash on the pan
  • Toss everything in the spices and pour the maple syrup over everything
  • Cover with foil and bake for 40 minutes
  • Uncover and bake for another 15 minutes
  • Baste the ribs and vegetables with pan juices and broil for a minute or two. Keep a close eye on it to prevent burning
  • Serve
