Honey Soy Glazed Shrimp with Snow Peas

Ingredients
  

  • 2 pounds of medium shrimp peeled and deveined
  • 1/2 - 1 teaspoon cayenne pepper (depending on how hot you like it
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup cornstarch
  • 1/2 cup canola or vegetable oil for frying
  • 1/4 cup soy sauce
  • 2 cloves of garlic
  • 1/2 teaspoon fresh or powdered ginger
  • 1/2 cup honey
  • 10 ounces of snow peas
  • Cooked white rice to serve

Instructions
 

  • Pat the shrimp dry and season it with cayenne and fresh ground pepper
  • Toss the shrimp in the cornstarch to coat
  • Heat the oil in a skillet
  • Fry the shrimp in one layer (do this in batches if your skillet isn't large enough) for 2 minutes per side
  • remove the shrimp from the oil and drain the oil from the skillet
  • Pour the soy sauce in the skillet, add the garlic and ginger and simmer for one minute, stirring to loosen any bits on the bottom of the pan
  • Pour in the honey and let simmer for 3 minutes until the mixture becomes thick
  • Stir the snow peas into the honey soy mixture and let cook for 1 minute
  • Turn off the heat and stir in the shrimp
  • Serve over rice
