Honey Soy Glazed Shrimp with Snow Peas

Ingredients
  

  • 2 pounds of medium shrimp peeled and deveined
  • 1/2 - 1 teaspoon cayenne pepper (depending on how hot you like it
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup cornstarch
  • 1/2 cup canola or vegetable oil for frying
  • 1/4 cup soy sauce
  • 2 cloves of garlic
  • 1/2 teaspoon fresh or powdered ginger
  • 1/2 cup honey
  • 10 ounces of snow peas
  • Cooked white rice to serve

Method
 

  1. Pat the shrimp dry and season it with cayenne and fresh ground pepper
  2. Toss the shrimp in the cornstarch to coat
  3. Heat the oil in a skillet
  4. Fry the shrimp in one layer (do this in batches if your skillet isn't large enough) for 2 minutes per side
  5. remove the shrimp from the oil and drain the oil from the skillet
  6. Pour the soy sauce in the skillet, add the garlic and ginger and simmer for one minute, stirring to loosen any bits on the bottom of the pan
  7. Pour in the honey and let simmer for 3 minutes until the mixture becomes thick
  8. Stir the snow peas into the honey soy mixture and let cook for 1 minute
  9. Turn off the heat and stir in the shrimp
  10. Serve over rice
