How to cook flank steak - The short answer is HOT and FAST

You will need a cast iron griddle or 12 inch cast iron pan

Ingredients
  

  • 2-3 pound flank steak
  • 2 teaspoons kosher salt
  • 1 teaspoon course ground black pepper
  • 1 teaspoon garlic powder
  • 1/4-1/2 teaspoon red pepper flakes
  • 1/2 teaspoon coriander optional
  • 2 tablespoons canola or grapeseed oil

Instructions
 

  • Remove the flank steak from the refrigerator 1 hour before you are ready to cook if you have time.
  • Score the flank steak (optional)
  • Mix the spices together and rub it on both sides of the flank steak
  • Heat the griddle or pan with the oil
  • You may have to cut the flank steak in half to fit it into the pan
  • Cook the flank steak for 4-5 minutes per side until it reaches your desired doneness
  • Remove the flank steak to a cutting board, tent it with foil and let it rest for 10 minutes
  • Slice the flank steak against the grain no more than 1/2 an inch thick
