1head of savoy or regular green cabbage about 8 cups chopped
4cupsof chopped kalecollard greens, Swiss chard or your favorite green
8cupsof chicken or vegetable broth
1teaspoonof salt
1/2teaspoonground pepper
OPTIONAL MIX INS
1Shrimp with zucchini noodlesfish sauce lime and sprouts
2Shredded cooked chicken with canned tomatochili powder, jalapenos and avocado
3Cooked corned beefcarrot and cauliflower
4Pork and shrimp meat balls with bok choysesame oil, sprouts and soy sauce, or coconut aminos
Instructions
Chop the onion, celery and bell pepper
Saute the vegetables in the oil until they soften, about 5-6 minutes
Add chopped cabbage, kale and broth. If the cabbage and kale don't all fit put in half with the broth, let it simmer, covered until it wilts, about 5 minutes, then stir in the rest
Let the soup simmer for 30 minutes
This makes about 3 quarts of soup. Store the soup in the refrigerator and reheat the amount you need until needed.
Reheat the amount of soup you need and add the mix ins to taste.
