Method
- Chop the onion, celery and bell pepper
- Saute the vegetables in the oil until they soften, about 5-6 minutes
- Add chopped cabbage, kale and broth. If the cabbage and kale don't all fit put in half with the broth, let it simmer, covered until it wilts, about 5 minutes, then stir in the rest
- Let the soup simmer for 30 minutes
- This makes about 3 quarts of soup. Store the soup in the refrigerator and reheat the amount you need until needed.
- Reheat the amount of soup you need and add the mix ins to taste.
