FOR THE CREAM CHEESE FILLING
Pour two 355 ml bottles into a saucepan and simmer over low heat until reduced to 1/2 cup
Let the syrup cool to room temperature
Beat the softened cream cheese, softened butter, Coke syrup and powdered sugar until well combined.
Refrigerate until ready to use
FOR THE COOKIE DOUGH
Beat the softened butter and brown sugar until well combined, about 2 minutes.
Beat in the egg and add the Coke
In a separate bowl combine the flour, salt and baking powder and mix well
Add the flour mixture to the Coke/Butter mixture and stir to combine
Scoop the cookie batter with a small ice cream scoop onto a parchment lined sheet pan. About 1 tablespoon
Bake the cookies for 8-10 minutes
Let the cookies cool and sandwich a teaspoon of filling between two cookies
