Coca-Cola and Cream Whoopie Pies

Ingredients
  

  • FOR THE CREAM CHEESE FILLING
  • Two 355 ml bottles of Coke de Mexico
  • 8 ounces softened cream cheese
  • 4 ounces of softened unsalted butter
  • 1 cup powdered sugar
  • FOR THE COOKIE DOUGH
  • 4 ounces 1/2 cup softened unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup coke
  • 1 egg
  • 1 and 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Instructions
 

  • FOR THE CREAM CHEESE FILLING
  • Pour two 355 ml bottles into a saucepan and simmer over low heat until reduced to 1/2 cup
  • Let the syrup cool to room temperature
  • Beat the softened cream cheese, softened butter, Coke syrup and powdered sugar until well combined.
  • Refrigerate until ready to use
  • FOR THE COOKIE DOUGH
  • Beat the softened butter and brown sugar until well combined, about 2 minutes.
  • Beat in the egg and add the Coke
  • In a separate bowl combine the flour, salt and baking powder and mix well
  • Add the flour mixture to the Coke/Butter mixture and stir to combine
  • Scoop the cookie batter with a small ice cream scoop onto a parchment lined sheet pan. About 1 tablespoon
  • Bake the cookies for 8-10 minutes
  • Let the cookies cool and sandwich a teaspoon of filling between two cookies
