Coca-Cola and Cream Whoopie Pies

Ingredients
  

  • FOR THE CREAM CHEESE FILLING
  • Two 355 ml bottles of Coke de Mexico
  • 8 ounces softened cream cheese
  • 4 ounces of softened unsalted butter
  • 1 cup powdered sugar
  • FOR THE COOKIE DOUGH
  • 4 ounces 1/2 cup softened unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup coke
  • 1 egg
  • 1 and 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Method
 

  1. FOR THE CREAM CHEESE FILLING
  2. Pour two 355 ml bottles into a saucepan and simmer over low heat until reduced to 1/2 cup
  3. Let the syrup cool to room temperature
  4. Beat the softened cream cheese, softened butter, Coke syrup and powdered sugar until well combined.
  5. Refrigerate until ready to use
  6. FOR THE COOKIE DOUGH
  7. Beat the softened butter and brown sugar until well combined, about 2 minutes.
  8. Beat in the egg and add the Coke
  9. In a separate bowl combine the flour, salt and baking powder and mix well
  10. Add the flour mixture to the Coke/Butter mixture and stir to combine
  11. Scoop the cookie batter with a small ice cream scoop onto a parchment lined sheet pan. About 1 tablespoon
  12. Bake the cookies for 8-10 minutes
  13. Let the cookies cool and sandwich a teaspoon of filling between two cookies
