Broiled Salmon Lettuce Wraps #RECIPE

You will need some bottled sweet chili sauce, a sheet pan and some foil to line the pan
Prep Time 5 minutes
Cook Time 11 minutes
Total Time 16 minutes
Servings: 4 servings

Ingredients
  

  • 2 pounds of Salmon fillets with or without skin depending on your preference
  • 1 tablespoon canola r vegetable oil
  • 1/2 teaspoon salt
  • 1/3 cup sweet chili sauce
  • 1 head red leaf lettuce
  • 1 cup cooked rice
  • 1 cup shredded carrots
  • 1 recipe of soy marinated cucumbers found on SweetSavant.com

Method
 

  1. Heat oven to 400 degrees
  2. Line the sheet pan with foil
  3. Pour oil onto sheet pan to prevent the fish from sticking
  4. Season both sides of the fish with salt
  5. Place fish skin side down onto the foil lined sheet pan
  6. coat the top of the fish with sweet chili sauce
  7. Bake the fish for about 5 minutes
  8. Turn on the broil and broil the fish until the top becomes brown and bubbly about 3 minutes
  9. Watch this closely, the sugar in the chili sauce burns easily
  10. If the fish isn't done enough, turn off the broiler and let the fish sit in the hot oven for 2-3 minutes more
