Hot and Crispy Southern Fried Oysters

Ingredients
  

  • 1 pint of shucked oysters
  • 2 cups milk whole or 2%
  • 2 lemon
  • 2 tablespoons hot sauce
  • 2 cups masa harina
  • SEASONING BLEND
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4-1/2 teaspoon cayenne pepper to taste
  • 1/2 teaspoon garlic powder
  • OR 2 teaspoon Old Bay Seasoning INSTEAD of the seasoning blend
  • Canola oil for frying about 2 cups

Method
 

  1. Stir together the milk, lemon juice and hot sauce
  2. Drain the oysters, add them to the milk mixture and refrigerate for 15 minutes
  3. In a shallow dish combine masa harina, salt, paprika, cayenne, and garlic powder
  4. Drain the oysters from the milk mixture and dredge them in the masa harina mixture
  5. Heat the oil in a skillet to 375 degrees
  6. Shake off excess masa and fry the oysters 6 or 8 at a time, don't crowd the pan
  7. Cook the oysters for 90 seconds to 2 minutes, flipping them over halfway through cooking if necessary
  8. Drain the oysters on paper towels and serve with comeback sauce, the recipe is in the blog post
