Roasted Acorn Squash Sundae

Ingredients
  

  • 2 acorn squash
  • 1/2 cup of water
  • 8 tablespoons brown sugar
  • 4 tablespoons unsalted butter
  • 1 teaspoon cinnamon
  • 4 scoops of vanilla or your favorite flavor ice cream
  • TOPPINGS
  • dulce de leche or caramel
  • chopped nuts
  • maraschino cherries
  • pomegranate
  • chocolate sauce
  • whipped cream

Method
 

  1. Pre-heat oven to 350 degrees
  2. Cut the acorn squash in half lengthwise and scrape out the seeds
  3. Place the squash cut side down on a baking tray and pour in a cup of water
  4. Bake the squash for 35-45 minutes or until tender
  5. Let cool until you can pick it up easily then scrape out the inside without damaging the shell
  6. Mix brown sugar, butter, and cinnamon into the squash and place it back into the shells
  7. Top with a scoop of ice cream and your favorite toppings
