Sweet Tea Brined Fried Baby Back RIBS

Ingredients
  

  • 4 extra large tea bags for iced tea I used decaffeinated
  • 6 cups of water
  • 1/2 cup brown sugar
  • 1/2 cup kosher salt
  • the juice of 1 lemon
  • 10 sprigs of fresh thyme
  • 6 garlic cloves
  • 2 cups of ice
  • 2 racks of baby back ribs
  • 2 boxes of House Autry pork breading
  • Canola oil for deep frying

Method
 

  1. Bring the water to a boil
  2. Place the teabags in a large container and pour the water in
  3. Let the tea bags steep for 5 minutes
  4. Remove the tea bags and stir in the salt, brown sugar, juice of 1 lemon, fresh thyme, and garlic cloves
  5. Add the ice and let the brine cool
  6. Cut the rack of ribs into individual ribs and place them into the brine
  7. Refrigerate overnight
  8. Bring your oil to 350 degrees
  9. Drain and rinse the ribs but let them stay damp
  10. Place the House Autry pork breading into a zip-top bag
  11. Add 5-7 ribs to the bag and shake the ribs in the pork breading
  12. Shake off excess breading and fry the ribs in batches, be sure not to overcrowd the pan
  13. Fry the ribs for 9 to 12 minutes per batch depending on the thickness of the ribs
  14. When the ribs are done remove them from the oil and drain them on a wire rack.
  15. Repeat until all of the ribs are cooked
  16. Serve with a side of your favorite dipping sauce
