Sweet Vidalia Onions-Kimchi Style #VisforVIDALIA

Servings: 2 cups

Ingredients
  

  • 2 large Vidalia onions- about 3 cups when sliced
  • 1 tablespoon kosher salt
  • 1-2 tablespoons Korean Red Pepper Powder depending on how spicy you like it
  • 1 tablespoon fish sauce
  • 1 teaspoon grated fresh garlic- about 2 or 3 cloves of garlic

Method
 

  1. Cut the onions in half and then into thin slices
  2. Toss the onions with the rest of the ingredients
  3. Serve immediately or
  4. Place into a plastic or glass container, cover with a lid and let it sit at room temperature for 1 day
  5. the mixture will begin to give off some liquid, push the sliced onions down so they will be covered by the liquid
  6. Refrigerate
