Yellow Cake Recipe with Cream Cheese Frosting and Blueberry Compote

I started with a box of cake mix.. Make it according to package directions in a 13x9 inch pan

Cook Time 40 minutes
Total Time 2 hours 40 minutes
Servings: 16 -20 servings

Ingredients
  

  • BLUEBERRY COMPOTE
  • 1 cup fresh blueberries
  • 1/4 cup of white granulated sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon of water
  • CREAM CHEESE FROSTING
  • one 8 ounce package of cream cheese- softened at room temperature
  • one 4 ounce stick of butter softened at room temperature
  • 1 cup powdered sugar
  • One 13 x 9 inch Yellow Cake from a mix made according to package directions

Method
 

  1. Add all of the blueberry compote ingredients into a saucepan and stir.
  2. Simmer for 5 minutes.
  3. Pour finished compote into a container and refrigerate until cool
  4. Beat the cream cheese in a mixer on medium speed until smooth. Add the butter and beat until smooth. Add the powdered sugar and (you guessed it) beat until smooth
  5. Set the frosting aside at room temperature until the cake is done
  6. Bake the cake according to package directions.
  7. Let the cake cool, remove it from the pan and place it on a platter.
  8. Spoon the frosting onto the top of the cooled cake, swirling it with the back of your spoon making peaks and valleys to catch the compote
  9. Spoon the compote over the frosting
  10. serve
