I love making broiled salmon for a quick delicious dinner. Salmon cooks quickly making it a fantastic choice for a weeknight meal. This marinated cucumber recipe is PERFECT with the salmon and it’s super easy to make. Sweet flavors pair well with salmon so I coat the fish with sweet chili sauce, that’s how my kids like it. I like mine on the salty/spicy side so instead of sweet chili sauce I season my salmon with coarse sea salt (or smoked salt if you can find it) and a little red chili flake.

Salmon is a rich fish that’s higher in fat than a fish like cod (even higher in fat than chicken breast but lower in fat than most beef)  however salmon is rich in omega 3 fatty acids making it really good for you.

Salmon is one of the most popular fish eaten in America making it easy to find in most grocery stores. Wild caught salmon is usually considered a “best choice” or “good alternative” by the Monterey Bay Aquarium Seafood Watch. There is some concern that farmed salmon may be high in antibiotics placing it on Monterey Bay Aquarium “Avoid” list.

I use Mae Ploy Sweet Chili Sauce that I pick up from Assi, Great Wall or Super H-Mart.

Broiled Salmon Lettuce Wraps #RECIPE

Demetra Overton Sweet Savant
You will need some bottled sweet chili sauce, a sheet pan and some foil to line the pan
Prep Time 5 minutes
Cook Time 11 minutes
Total Time 16 minutes
Servings 4 servings

Ingredients
  

  • 2 pounds of Salmon fillets with or without skin depending on your preference
  • 1 tablespoon canola r vegetable oil
  • 1/2 teaspoon salt
  • 1/3 cup sweet chili sauce
  • 1 head red leaf lettuce
  • 1 cup cooked rice
  • 1 cup shredded carrots
  • 1 recipe of soy marinated cucumbers found on SweetSavant.com

Instructions
 

  • Heat oven to 400 degrees
  • Line the sheet pan with foil
  • Pour oil onto sheet pan to prevent the fish from sticking
  • Season both sides of the fish with salt
  • Place fish skin side down onto the foil lined sheet pan
  • coat the top of the fish with sweet chili sauce
  • Bake the fish for about 5 minutes
  • Turn on the broil and broil the fish until the top becomes brown and bubbly about 3 minutes
  • Watch this closely, the sugar in the chili sauce burns easily
  • If the fish isn't done enough, turn off the broiler and let the fish sit in the hot oven for 2-3 minutes more

    This looks so delicious! My son dislike lettuce. Will this go well with a tortilla wrap as well?

      I haven’t tried it myself but I think this would go well on a tortilla Katherine. Let me know how you like it if you make a tortilla version
