Broiled Flounder with Angel Hair Pasta Risotto Style is a delicious meal you can get on the table in minutes.I wanted to broadcast a fast cooking demo live on Periscope so I challenged myself to attempt a recipe in under six minutes. Sounds crazy, I know but what the heck it seemed like fun. I picked ingredients that I knew would cook quickly like fish, broccoli and thin pasta.
The pressure was on, I had never attempted this recipe before and six minutes is a REALLY short time. I wanted to show the entire recipe start to finish with no pre measuring or advanced planning.
We started by combining some chicken broth and canned fire roasted tomatoes in a large microwave proof container and cooking it on high for about 3 minutes (you can do this on the stove top in a sauce pan if you like, it should take about or six minutes to boil).
While the broth and tomatoes were heating in the microwave I placed an empty sheet pan under the broiler for 2-3 minutes and heated a cast iron Dutch oven on my stove top with about 2 tablespoons of canola oil. I diced half and onion and half a red bell pepper and sauteed them in the Dutch oven until they became soft. Then I added in some chopped garlic, the broken angel hair pasta and the hot chicken broth/canned tomato combination. I stirred this around a bit, placed the broccoli on top and covered the Dutch oven. As this cooked I seasoned the flounder with salt, pepper and granulated garlic, carefully rubbed a little canola oil on the hot sheet pan, placed the flounder on top and slid the sheet pan back under the broiler. The flounder is thin so it was finished cooking in about 3 minutes.

Things were going pretty well until this point but six minutes just wasn’t enough time, then I had a bit of technical difficulty with Periscope, my broadcast froze. I had to pause to get the broadcast going again and while this was going on I checked my pasta. The liquid had boiled down but the pasta wasn’t quite done so I stirred in an additional cup of chicken broth. This needed to simmer for just another minute to soften the pasta, the fish was ready and diner was served.
The Broiled Flounder with Angel Hair Pasta Risotto Style was delicious but I didn’t finish the dish in 6 minutes. Start to finish the whole recipe took about 12 minutes, that’s still pretty fast. Check out the video below

Broiled Flounder with Angel Hair Pasta Risotto Style
- one 14 ounce can diced tomatoes
- 3 cups of low sodium chicken broth divided
- canola or vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 2 cloves garlic minced
- 1 pound angel hair pasta
- 12 ounces fresh broccoli florettes
- six 3 ounce flounder filets
- garlic powder
- 2 tablespoons of butter optional
- 2-3 tablespoons Parmesan cheese optional
- Combine 2 cups of chicken broth (reserve one cup for later) and one can of diced tomatoes with juice in a microwave proof container. Heat this in the microwave for 3 minutes or until hot
- Turn on your broiler and place the sheet pan under the broiler
- Heat the Dutch oven with 2 tablespoons of canola oil
- Saute the diced onions and peppers for 2-3 minutes. Add garlic and stir for 30 seconds more
- Break the angel hair pasta into thirds, place in the Dutch oven and stir.
- Pour the hot chicken broth/tomato mixture over the pasta, stir and top with broccoli
- Cover and simmer for 2 minutes. Stir in the remaining cup of chicken broth and butter and Parmesan cheese if using. Cover and cook for another minute or two until done.
- While the pasta is cooking, season the flounder with 1/2 teaspoon of salt, 1/8 teaspoon of pepper and 1/4 teaspoon of granulated garlic.
- Remove the sheet pan from the broiler, pour 1 tablespoon of canola oil on it and add the flounder
- Place the flounder under the broiler for 3 minutes
