Broiled Flounder with Angel Hair Pasta Risotto Style

You will need a sheet pan, a Dutch oven or large sauce pan and a microwave proof container

Servings: 4 -6 servings

Ingredients
  

  • one 14 ounce can diced tomatoes
  • 3 cups of low sodium chicken broth divided
  • canola or vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 2 cloves garlic minced
  • 1 pound angel hair pasta
  • 12 ounces fresh broccoli florettes
  • six 3 ounce flounder filets
  • salt
  • pepper
  • garlic powder
  • 2 tablespoons of butter optional
  • 2-3 tablespoons Parmesan cheese optional

Method
 

  1. Combine 2 cups of chicken broth (reserve one cup for later) and one can of diced tomatoes with juice in a microwave proof container. Heat this in the microwave for 3 minutes or until hot
  2. Turn on your broiler and place the sheet pan under the broiler
  3. Heat the Dutch oven with 2 tablespoons of canola oil
  4. Saute the diced onions and peppers for 2-3 minutes. Add garlic and stir for 30 seconds more
  5. Break the angel hair pasta into thirds, place in the Dutch oven and stir.
  6. Pour the hot chicken broth/tomato mixture over the pasta, stir and top with broccoli
  7. Cover and simmer for 2 minutes. Stir in the remaining cup of chicken broth and butter and Parmesan cheese if using. Cover and cook for another minute or two until done.
  8. While the pasta is cooking, season the flounder with 1/2 teaspoon of salt, 1/8 teaspoon of pepper and 1/4 teaspoon of granulated garlic.
  9. Remove the sheet pan from the broiler, pour 1 tablespoon of canola oil on it and add the flounder
  10. Place the flounder under the broiler for 3 minutes
