This cheesy beef and rice casserole is made in the Ninja Foodi combination air fryer and pressure cooker.

First, gather your ingredients. This is a great recipe to add LOTS of different vegetables. used onions, peppers, garlic and frozen spinach in this version. Chopped celery and mushrooms would be FANTASTIC as well. What veggies will you add when you make this? Let me know in the comments!

What kind of ground beef is best to use?
I used lean ground beef with only 7% fat. If you use beef with more fat you will have to drain the fat after you brown it. Well, you don’t have to drain it, that’s up to you. I would drain the excess fat.
Ground turkey or chicken would make great substitutions for ground beef in this recipe. Cut the amount of meat in half and increase the vegetables if you like.

Ingredients
- 1/2 cup onions chopped
- 1/2 cup red bell pepper chopped
- 1/4 cup scallions chopped
- 2 cloves garlic chopped
- 1 and 1/2 cup frozen chopped spinach
- 3 cups rice
- 3 and 1/3 cups chicken broth you can substitute beef broth or water
- 1 and 1/2 pounds lean ground beef
- 1 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese OPTIONAL
- 2 tablespoons canola or vegetable oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon paprika
Instructions
- Set the Ninja Foodi to SAUTE and add oil
- add the chopped onion, pepper and green onion to the Foodi and saute for 5 minutes
- add ground beef, salt, pepper, garlic powder ane paprika then brown for 5 minutes then add garlic. Cook for 30 seconds more
- Stir in the rice then add chicken broth and frozen spinach
- Cover the Ninja Foodi with the pressure cook lid then cook on HIGH pressure for 3 minutes
- Natural release for 10 minutes then manually release the rest of the pressure
- Reserve 1/2 a cup of cheese for the top. Stir in the rest of the cheddar and mozzarella cheese.
- Top with reserved cheddar cheese then close the AIR CRISP LID. BROIL for about 5 minutes or until the cheese is melted and browned.
