One whole medium size red bell pepper contains between 7-10 grams of carbohydrate. Each pepper contains about a half cup (before cooking) of chopped broccoli which adds another 6 grams of carbohydrate. The sliced scallion in the dish adds one more gram of carbohydrate to each whole pepper. The numbers look good to me! One whole stuffed bell pepper tops out at about 17 grams of carbohydrate which works for me.

Chicken Bacon and Broccoli Stuffed Peppers

Ingredients
  

  • 2 red or yellow bell peppers or 8 mini sweet peppers
  • 4-6 ounces of bacon
  • 1 teaspoon vegeable or canola oil
  • 4 boneless skinless chicken thighs
  • 3 scallions
  • 2 cups finely chopped broccoli
  • 1 cup shredded cheddar blend PLUS 1/2 cup of cheese for the top

Instructions
 

  • Pre heat the oven to 350 degree
  • Prepare the peppers by cutting them in half and removing the seeds and stem
  • Chop the bacon into pieces and brown it in the skillet with the oil
  • Cut the chicken thighs into roughly 1/2 inch pieces. Chop the scallions and add it to the chicken
  • Add the chicken to the pan and cook for 8-10 minutes, until the chicken is cooked through
  • Add the broccoli and cook until the broccoli is tender.
  • Turn off the heat and stir in1 cup of cheese
  • Divide the chicken mixture evenly between the peppers and top with the reserved 1/2 cup of cheese
  • Bake the peppers for 15-20 minutes until the peppers become tender
