Chopped salad with roasted chicken

I make this salad with leftover roast chicken from Sunday dinner. I like to roast two chickens when I have time so I can remix the leftovers into delicious dishes like this. Juicy chicken breast tops crunchy raw vegetables dressed in a lemon/dill mayonnaise based dressing. This is similar to the dip I use for my Firecracker Hot Wings recipe If you don’t like mayo please feel free to use a little olive oil or Greek yogurt.

Summer Chopped Chicken Salad
Ingredients
- 2 roast chicken breasts
- 2 cucumbers
- 2 zucchini
- 1 cup cherry tomatoes
- 3 cups fresh broccoli florets
- 3 green onions
- 1/2 cup mayonnaise
- 3 tablespoons fresh lemon juice
- 1 garlic clove
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon dried dill
- 4 slices of cooked bacon chopped
- 1 avocado slices
Instructions
- Chop the fresh vegetables into pieces and place in a large bowl
- Combine the vegetables with mayonnaise, lemon juice, salt, pepper and dill. Grate the garlic clove into the salad. Stir to combine
- Top the salad with chicken, bacon and avocado
- Divide evenly between 4 bowls
