Juicy chicken breast tops crunchy raw vegetables dressed in a lemon/dill mayonnaise based dressing. This is similar to the dip I use for my Firecracker Hot Wings recipe If you don’t like mayo please feel free to use a little olive oil or Greek yogurt.

Ingredients
  

  • 2 roast chicken breasts
  • 2 cucumbers
  • 2 zucchini
  • 1 cup cherry tomatoes
  • 3 cups fresh broccoli florets
  • 3 green onions
  • 1/2 cup mayonnaise
  • 3 tablespoons fresh lemon juice
  • 1 garlic clove
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon dried dill
  • 4 slices of cooked bacon chopped
  • 1 avocado slices

Instructions
 

  • Chop the fresh vegetables into pieces and place in a large bowl
  • Combine the vegetables with mayonnaise, lemon juice, salt, pepper and dill. Grate the garlic clove into the salad. Stir to combine
  • Top the salad with chicken, bacon and avocado
  • Divide evenly between 4 bowls
