You might be surprised that a convention center that serves thousands of people at an event could provide fresh, delicious, seasonal, local dishes, I know I was. Cobb Galleria Centre  (2 Galleria Parkway Atlanta, Georgia 30339) has a gem of a chef on their hands in Nick Walker. Trained here in Atlanta at the Art Institute, Chef Nick and his staff are dedicated to presenting their massive numbers of guests fine dining quality meals.

I was fortunate enough to be invited to Chef Nick’s media dinner, a chef’s table in the immaculate kitchen of Cobb Galleria Centre. We were treated to seven fantastic courses, great service and delicious wine.

For our Amuse Bouche the chef himself served us Champagne and these delicious Green Tomato Pies with Goat Cheese

First course was Smoked Scallop Crudo with 400 day aged Country Ham, Fresno chili, Celery and Grilled Peach. Stunningly beautiful, check out the short video below

Second course Charred Carrot Soup (smokey and a little spicy from roasted jalapeno) Baby Grilled Cheese and Yogurt Powder

Third course was my favorite Southern Fried Quail soaked 48 hours in buttermilk and hot sauce) Buttermilk Pancake, Black Pepper, Sorghum Vinaigrette, Apple, Frisee and Pickled Grapes (I’m partial to sorghum, I used it in my APPLE UPSIDE DOWN CAKE)

Course number four was Braised Rabbit and Sweet Potato Dumplings, a very tasty take on a classic southern comfort food dish

Course five was Creole Catfish, Pork Belly, Creamed Corn, Roasted Red Pepper Harissa and Okra Chips (you know how much I love CATFISH from this catfish cakes recipe)

Sixth Course was this delicious dessert. Vanilla and Ginger Blackberry Cobbler Served with Buttermilk Gelato

This meal changed my perception of convention center food. Everything was fresh and cooled perfectly. I would like to thank Chef Nick and his entire staff for inviting us for this beautiful evening. I would highly recommend Cobb Galleria Centre for any group hosting an event in Georgia.

    Chef Nick Walker is a ROCK STAR! He is a creative culinary genius, and his creations and presentations are among the best I have experienced.
