It was a beautiful day to spend outside touring a farm. It was warm (maybe in the high 70’s) there was a slight breeze and juts a few clouds to keep the sun from scorching us. Al Pearson, owner of Pearson Farm, lead a group of bloggers on a tour of his expansive property filled with pecan and peach trees. We’re into pecan season now  so the trees are shaken (see the Instagram video below) and the pecans fall to the ground. A large vehicle drives down the rows of trees and scoops up the fallen nuts.

Local residents are employed to process the pecans, about 5% of them are shelled in house. The rest are shipped out across the world, shell on. During peach season the workforce increases to include migrant workers, mostly from Mexico, using the H-2A program.

Pearson Farm is a family business, Al and his son Lawton run the day to day operation while Al’s wife Mary develops recipes for Pearson Farm’s prepared products and Hostess and Corporate Gift division. Mary Pearson is rather particular about the products she uses to make her pecan treats, she wants nothing to do with preservatives and artificial flavors. Near the end of our tour we stopped by Al and Mary Pearson’s lovely home for a delicious lunch prepared by Mary, ending it with Mary’s buttermilk pecan pie. That was a real treat because I’d been thinking of having a slice of fresh pecan pie since I woke up that morning.

The lovely folks from Pearson Farms gifted each of us a variety of pecan treats including a couple of their tasty pecan snickerdoodles, the chocolate covered pecans mentioned above and bags of fresh and seasoned pecans. I used the sweet, tiny “Elliot” pecans in this Sweet Potato Pecan Pie recipe. I used a deep dish pie pan like this one so I could get nice layers of sweet potato custard and pecan praline.

Sweet Potato Pecan Pie Recipe

Cook Time 45 minutes
Total Time 1 hour 45 minutes
Servings 8 servings

Ingredients
  

  • 1 and 1/2 cups of pureed sweet potato from 2 sweet potatoes totaling 1 and a 1/4 pounds
  • one 8.8 ounce package of Biscoff Cookies
  • 6 tablespoons of melted butter
  • 5 eggs you will use 3 in one part of the recipe and 2 in another part
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 8 ounces pecan halves
  • 1/2 cup brown sugar
  • 1 cup sorghum syrup

Instructions
 

  • Heat the oven to 350 degrees
  • Roast the sweet potatoes whole until they are tender, about 45 minutes to one hour. let cool to room temperature
  • While the sweet potatoes are roasting make the pie crust. Process the Biscoff into fine crumbs. Add butter and mix until thoroughly combined. Press the Biscoff crumbs into the bottom of the pie pan and up the sides
  • Bake the pie crust for 10 minutes. Let cool
  • Peel and slice the sweet potatoes and puree them in a food processor with 3 eggs, brown sugar, vanilla and cinnamon
  • Reduce the oven temperature to 300 degrees
  • Pour the sweet potato filling into the Biscoff Crust
  • MAKE SURE TO LEAVE SPACE FOR THE PECAN PIE FILLING
  • Arrange the pecans on top of the sweet potatoes pressing them a bit into the sweet potato
  • Beat 2 eggs with the sorghum syrup and pour over the top of the pecans. You may not need all of the filling
  • Bake the pie for 45 minutes. It will puff a bit

    Sounds like you had a really good trip! I grew up around pecan trees and I wish we would have had a truck that would come around to pick up the pecans instead of us having to bend over to get them. The pie looks so delicious and I love that you used Biscoff cookies and sorghum 🙂

      Hi LaKita! That pecan truck is amazing, isn’t it? My uncle has a grove of pecan trees on his property and when we go to visit we pick them up from the ground and bring them home. It really is back-breaking work if you want to bake a pie!
