When I was doing my holiday meal shopping at Walmart I picked up a Cherrywood flavor Hormel Cure 81 bone-in ham, some potatoes and mozzarella cheese. We had a fantastic meal and quite a few leftovers. The kids got super excited when I told them I was going to make Ham, Cheese and Potato Croquettes and hounded me about when I was going to cook them. Who can blame them? Smokey ham, melted cheese and creamy mashed potatoes are a fantastic combination. Both my teens helped me stuff the diced ham and shredded cheese into disks of mashed potatoes and roll them into balls. Many hands make light work, so these were done in almost no time.

Ham and Cheese Potato Croquettes

Servings 20 croquettes

Ingredients
  

  • 2 cups mashed potatoes
  • 1/2 cup diced Hormel Cure 81 ham
  • 1/2 cup shredded mozzarella cheese
  • 2 eggs
  • 2 cups panko breadcrumbs
  • vegetable oil or canola oil for frying

Instructions
 

  • First set up your ingredients. Chop the ham into 1/4 inch dice, and shred the cheese. Place your bowl of mashed potatoes with your ingredients. Beat two eggs in a bowl and place the panko bread crumbs in another bowl.
  • Scoop about one and a half tablespoons of mashed potato into your hand and form into a disk
  • Place 1/2 teaspoon of diced ham and 1/2 teaspoon of shredded mozzarella into the center of the mashed potato disk
  • Fold the mashed potatoes over the filling and form into a ball
  • Roll the ball in the beaten egg
  • Roll the ball in panko. Form all the mashed potato croquettes and place them into the refrigerator for half an hour
  • Heat an inch of oil in your pot and bring the oil to 325 degrees
  • Fry the croquettes in batches of about 5-6 for 2 minutes per side, until golden brown
  • Drain on paper towels and serve

    Is there a way to possibly bake these? I have health issues that make me avoid fried food as much as possible….but these look SO good that I’d really like to try a baked version. I’m not much of a cook without a recipe, unfortunately. So was wondering about things like oven temperature and length of baking time please. Please feel free to respond using my email address.       Hi Dawn! You could bake these on a lightly oiled sheet pan, though they may flatten a bit. You might have better success if you flatten them a bit to ensure the panko bread crumbs have sufficient contact with the pan. Be careful when you turn them as they are very delicate and could fall apart.
