I do love a quick, easy and delicious dinner and this simple recipe fits the bill PERFECTLY! Just grab a sheet pan and load it with a few wedges of cabbage, big chunks of sweet potato, some sausage and sweet onions.

Pop it into a hot oven then sit back and relax. Just flip the ingredients over about halfway through cooking then serve it up hot.

SAUSAGE

Use fully cooked sausage that just needs to be heated through for a fast meal. Shout out to Kroger for sending me a “best customer bonus” coupon in the mail, that inspired the whole meal. I know they collect shopping habit data on me in exchange for coupons but I don’t mind the trade-off. This dinner is already budget-friendly, cabbage and sweet potato are pretty cheap in the grocery store, the free sausage just puts it over the top. Turkey or beef sausage work great in this recipe, try spicier flavors like Cajun style sausage for more variety.

VEGETABLES

Roasting vegetables brings out their sweetness and concentrates the flavors. Cut the vegetables so they all cook in about the same amount of time then drizzle the vegetables with oil and sprinkle with salt, pepper and garlic powder. A little crushed fennel seed and red pepper flake make it even better. I used red cabbage because I was attracted to the vibrant color – you eat with your eyes first.

Feel free to substitute green or savoy cabbage for red/purple cabbage. I was really looking to get a bit of char on the edges of the cabbage to add even more flavor and complexity to the meal. All of the vegetables in this dish benefit from controlled burning, not too much or your food will be bitter and unpleasant. A little char goes a long way.

Sweet potatoes add more gorgeous color and wonderful sweetness. Leave the skin on for ease of preparation and great, earthy flavor. Yukon Gold potatoes work very well with this recipe as well.

Big chunks of sweet onions caramelize and become almost like candy when roasted. Sweet, Georgia grown Vidalia onions are a real treat if you can find them. If you don’t see them in your local grocery store, ask them to order some. It’s totally worth it!

Toss everything together on a sheet pan and roast at 450 degrees for a total of 30 minutes. Flip each item over about halfway through cooking and you’re done. I like to roast the sausage until it bursts open and lets its juices run onto the pan. To me, it just looks and tastes better like that. Drizzle a little sherry vinegar or red wine vinegar on your vegetables when you serve them if you like.

Roasted Cabbage and Sausage

Ingredients
  

  • One 12 ounce dinner sausage
  • half a head of red/purple cabbage
  • 2 medium sweet potatoes
  • 2 large Vidalia or regular onions
  • 3 tablespoons grapeseed or canola oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon fennel seed optional
  • 1/4 teaspoon red pepper flakes optional
  • 1 teaspoon sherry vinegar or red wine vinegar optional

Instructions
 

  • Heat the oven to 450 degrees
  • Slice the cabbage into 4 or 5 wedges
  • Cut the sweet potato into 1-inch chunks
  • Cut each onion into 6 wedges
  • Add all the vegetables to the pan, toss them in oil and season with the spices
  • Add the sausage to the pan
  • Place the pan into the oven and roast everything for 15 minutes, flip all the ingredients over and roast for another 15 minutes
  • Drizzle with a teaspoon or so of sherry vinegar or red wine vinegar if you like
  • Cook until all the vegetables are tender and the sausage is cooked through
